What's not to LOVE about summer?

I absolutely adore summer. The heat,the fruit,summer dresses. I love it all. This summer has gone by way too fast, it makes me sad. We are going to try and get at least one more camping trip in before fall though. A couple weeks ago we celebrated my niece's 8th birthday at our house and it was a blast. I have also been enjoying my fresh herbs from the garden. My tomatoes are slowly coming along so I can't wait for that too. Here are some photos for your viewing enjoyment!!

This tasty little treat came from Leather bee's in SLC. It was almond ice cream with their homemade Carmel sauce. If I could get this pumped directly into my veins it would! It's that good!!

Let there be food!

Hello everyone out there in bloggy land! I've been reading about all the adventures at the Blog Her convention that I am missing :( Looks like everyone is having a spectacular time in NYC. Maybe next year. Well not much to report around here. Here are a few pics for ya!
We went to the "Red Iguana" for dinner and it was awesome. It was featured on Diners Drive- In's and Dives last year. This place has amazing Mexican food!

Its quite a dive and its located in the ghetto but people don't mind, they will wait in long lines just to eat this amazing food.

This was our entree, the "Killer Nachos". They were so good.

Here is the hubby. Nice grin dude. I didn't get pics of our actual dinner, I felt like a weirdo busting out my camera and taking tons of pics. The place was packed. I can't wait to go back.

In a Fog

Hello friends. Today I woke up feeling refreshed and ready to tackle the day. Then it hit me that my "stomach issue" was still not gone :( I don't know what I ate but something has not liked me for 4 days now. I've been trying to take it easy and eat bland not spicy food but nothing is helping. I think today I ate my weight in this:

Not really sure what to do next. I've been avoiding dairy and wheat. Hopefully this passes soon tummy trouble is the worst.

Happy Monday

So I've been a total slacker lately. I need to kick it into high gear and blog more often like I want to. So for the last 2 days, I have had some stomach issues. Not sure if I ate something weird at the farmers market or what. I've been trying to be mellow for the last 2 days and not eat too much of anything so I don't make it hurt worse. Anyway onto more exciting things. First a shout out to Janetha! Congrats on your wedding, it looks like it went beautifully and your cake looked amazing with the hounds-tooth pattern. Love it! Can't wait to see more pics. So we went camping in the Uintah mts and I had a purse/cocktail party and lots of fruit to eat. Is it possible to OD on fruit? Well here are some pics for your viewing enjoyment!

Camping was a blast. We enjoyed sun,rain,hail,thunder. Everything except snow. It was muddy but great.

Yummy Vegan or Not vegan Granola

Home-made vegan granola :D

  • Preheat oven to 300*

  • 1 Tbs. melted vegan butter (I used earth balance)

  • 1 Tbs.of 1 of the following: agave nectar,honey,yacon syrup,maple etc. (honey is not vegan)

  • 1/2 tsp cinnamon

  • 1 tbs vanilla extract

  • 1tbs +1 tsp canola oil or oil of your choice

  • 2 cups old fashioned oats

  • 1/2 c chopped nuts of choice

  • 1/8 tsp salt

  • 10 drops vanilla flavored liquid stevia (optional)

  • 1/4 c chopped unsweetened coconut

  • Mix butter,oil,agave or other sweetener,cinnamon,vanilla in small bowl.

  • Add to oats and coconut and stir until all is coated well.

  • Lay flat on cookie sheet sprayed with canola spray.

  • Bake for 25-30 mins stirring every 5 mins for last 10 mins of baking.

  • ENJOY!!!

  • You can also stir in mix in as well,craisins,raisins,seeds you get the picture!!

4th of July recap

Happy Tuesday y'all. Wow this weekend flew by and I had so much fun with pool parties and BB Q's and fireworks. Hope you all had as much fun as I did. Here are some pics for your enjoyment.

This 4th of July was so much fun with all my friends and family,good food and fireworks. Sorry no pics of them. Hope you all had a relaxing fun long weekend. This weekend, we are heading to the Uintah  Mts. for camping. Have a great week!

Some like it RAW

Greetings from blogger ville! So lately I've been playing around with some raw dessert recipes and watching YouTube for inspiration. I also purchased a few raw cookbooks and came up with this beauty!
100% Raw strawberry swirl cheezecake!



This was AMAZING! I think I like it better than normal cheesecake. It had no eggs,cream cheese,sugar,flour,butter,oil. Wow a healthy dessert can taste good. I didn't really use a recipe, I just threw in a little of this and a little of that.
